Marrakesh Sunset

Marrakesh, Merrakech — however you spell it, this one is a must for every spice rack. It was developed after an especially memorable and delicious night on the town. I had a superb Chicken Tagine at a very fine restaurant, with preserved lemons and olives and marvelous spices - the best I'd ever tasted. The flavours haunted me for weeks.

Having some experience in the kitchen of a Morrocan restaurant (that's another story), I set out to duplicate the aromas and flavours of the dish, and, if possible, bring perhaps even more life to it. The result is Marrakesh Sunset Warm spices - like ginger, cinnamon, cloves - are blended with groud turmeric root, cardamom, coriander, red chlies, paprika, cayenne, and a little black pepper in perfect harmony, resulting in a wonderfully fragrant, richly aromatic spice with layers of flavour that tantalize with every bite.
